Ingredients
- 1/2 cup canned pumpkin
- 1/2 cup low fat vanilla yogurt
- 1/4 teaspoon baking soda
- 1 large egg yolk
- 1/4 cup cake flour
- 4 large eggwhites
- 1/4 teaspoon salt
- cooking spray
- maple syrup or honey
Preparation
Whisk together pumpkin, yogurt, baking soda, egg yolk, and flour. Whisk egg whites with salt; fold into pumpkin mixture. Heat a large nonstick skillet coated with cooking spray over medium heat. Spoon in 1/3 cup batter for each pancake. Flip when tops are covered with bubbles and edges are slightly brown (about 3 minutes per side). Drizzle with syrup or honey.

This is one of the recipes in my Hungry Girl 300 under 300 (300 recipes under 300 calories) cookbook. Just tried it this morning and it was SO deliciously cheesy. I loved it. I just took a picture of it off the internet because mine didn’t look quite as pretty haha
- 1.) Have that second cup of coffee. It might lower your risk for adult-onset diabetes.

- 5.) Eat protein at every meal. Dieters who eat protein at every meal tend to loss weight because they feel fuller.
- 6.) Choose whole grain bread. Eating whole grain has been linked to lower risks of cancer and heart disease.
- 7.) Think fish. Consuming two 4- to 6-ounce servings of oily fish a week will sharpen your mind. (Unless you think fish is disgusting like me, it’s just a suggestion.)

- 23.) Snack on popcorn. People who eat 1 cup of popcorn before lunch eat 105 less calories. Choose the non butter kind.
- 24.) Snack on walnuts. (If you aren’t allergic.) It may raise your good cholesterol and lower your bad cholesterol.
- 25.) Scramble your breakfast. (No not your cereal, pancakes, muffins, waffles, etc.! Your damn eggs.) People who eat eggs for breakfast other than a bagel ate 264 calories less the rest of the day.
